Here it is; the recipe of the famous Portuguese Pastel de Nata - Portuguese Cream Tarts, which I made on the 1st Dining Guide Street Food Show in Budapest, almost one year ago.

Ingredientsfor 15 pieces 270 g puff pastry (may be homemade)2,5 dl cream (or whole milk)4 egg yolks (about 50 g)80 g cane sugar powderzest of 1 untreated lemon5 g cornstarch or potato starchground cinnamon to sprinkle
pastel (or muffin) moldsPreparation
For the cream mix well the ingredients until smooth and then put the mixture into a small saucepan, over medium heat. Stir constantly until it thickens to pudding consistency. Don’t let it boil. When it’s done, set aside to cool.
Meanwhile, roll up the puff pastry and cut into 15 identical parts. With wet fingers put one by one into the pastry forms and let it rest for 10 minutes.
Divide the cream by the tartlets and place them into a hot oven (250C°) for 20 minutes. A wood oven may also be used.
Before serving sprinkle the Pasteis de Nata with ground cinnamon.
Tip: The prepared tarts may also be frozened, if they’re made with fresh puff pastry (they will obviously then need more time in the oven when you bake them).
